  • The comparison in one box. Six mornings of clean washed florals with Luna Nueva, six mornings of syrupy natural fruit with Luna Llena.

  • Twelve precision doses. Individual 15g whole bean tubes sealed at origin, perfectly measured for a single 250g pour-over.

  • Same trees, same harvest, two completely different outcomes. The clearest way to understand what processing actually does to coffee.

  • Both lots roasted side-by-side at the Boquete mill and air-freighted within 48 hours, so both open at peak freshness.

Your Questions, Answered

How much coffee is this actually?

Two 57g sachets, giving you 114g total (half a standard bag). At our recommended ratio of 15g per cup, that yields about six brews of each coffee, or twelve in total. One cup is rarely enough to dial in your grind setting. Six servings give you plenty of room to calibrate and properly evaluate both profiles.

Is it the same coffee as the full bags, or offcuts?

The exact same lot, roast, and roast date. The coffee is measured directly from the identical batches that fill our full 227g bags on packing day. We buy one lot a year from one single farm, meaning there are no secondary grades or leftovers anywhere in our line.

Why is the flight not proportionally cheaper?

Packaging and shipping do not scale down linearly. Two custom nitrogen-sealed sachets, a rigid presentation box, and custom documentation cost more per gram to manufacture, and the parcel costs the same to air freight. Once you identify which profile you prefer, full bags offer the better per-gram value.

Which one should I brew first?

Start with Luna Nueva, the washed lot. Its crisp, tea-like transparency gives you a clean baseline before experiencing the heavier fruit layers of the natural. We recommend brewing them on consecutive mornings with the same recipe and water temperature rather than drinking them back-to-back to prevent palate fatigue.

What if I do not like one of them?

Discovering a clear preference between washed and natural processing is the entire reason this tasting set exists. If both lots fall short of your expectations, send us an email within 30 days and we will issue a full refund under our guarantee. There is no need to return the coffee.

Do I need special equipment?

A basic burr grinder and any standard pour-over dripper are all you need. The grinder is the most critical element, as whole beans preserve the delicate florals that make high-altitude Geisha unique. If you have questions about dialling in with your specific setup, reach out to us and we will help you get the most out of every brew.

Can I buy this as a gift?

Yes, it is designed perfectly for gifting. It gives any coffee enthusiast a curated side-by-side tasting experience of two world-class processes from the same harvest. Simply note that it is a gift at checkout and we will omit the pricing details from the packing slip.

The Flight · Two Expressions, One Harvest

The exact same harvest.
Two radically different outcomes.

Both lots come from the exact same trees at Finca La Valentina, picked in the same week at 1,600 metres. The divergence begins seconds after harvest: one stripped immediately to reveal the naked seed, the other left untouched inside whole cherry sugars for 30 days.

Luna Nueva Washed Beans Phase 01 · 6 Doses
The Subtraction

Luna Nueva (Washed)

Depulped within hours of picking and rinsed in cold mountain spring water. Strips away all fruit mucilage so you taste only the soil, altitude, and pure Geisha variety.

Jasmine Blossom / Bergamot / White Tea Body
Luna Llena Natural Beans Phase 02 · 6 Doses
The Addition

Luna Llena (Natural)

Dried whole on raised mesh beds for 3 to 5 weeks. Fruit sugars slowly migrate into the core of the seed, imparting profound richness, syrup weight, and wild sweetness.

Wild Berry / Ripe Stone Fruit / Dessert Wine Body
Flight Architecture

Engineered for calibration, not decoration.

We refused to make a generic sampler. One dose is never enough to judge exceptional coffee because dialling in grind size on a new lot takes trial and error.

Fases provides 12 calibrated 15-gram doses. That gives you 2 test cups per lot to calibrate your grinder and 4 pristine competition-grade extractions to judge each profile on equal terms.

The Calibration Protocol

How to extract the full story.

Do not brew both side-by-side on morning one. Palate fatigue dulls high-altitude aromatics. Follow this structured roadmap over twelve mornings.

Days 01 – 03

The Baseline (Washed)

Brew Luna Nueva at 94°C with a medium-fine grind. Settle your palate on pure terroir, delicate jasmine, and tea-like transparency.

Days 04 – 06

The Inversion (Natural)

Switch to Luna Llena using the exact same water and ratio. Notice how the same bean transforms into heavy wine-like stone fruit and blackberry.

Days 07 – 12

The Alternation

Alternate every morning. By cup eight, your palate will instinctively know whether you belong with the structural clarity of Washed or the wild weight of Natural.
