Why altitude changes the cup

Geisha is not expensive because it is rare. It is expensive because of a chain of physical effects that only line up in a few places on earth. This page is that chain.

Agronomy, roast chemistry, and how a coffee is scored

A page titled science on a coffee website is usually a stock photo of a laboratory and a paragraph about antioxidants. This one is about four measurable things, in the order they happen.

Altitude produces cold nights. Cold nights slow ripening. Slow ripening builds bean density. Density is what allows a light roast to work at all, and a light roast is the only way the aromatics you are paying for reach your cup.

Break any link and the coffee is ordinary. That is the whole argument, and every claim below is checkable.

1. The diurnal swing

Boquete sits on the flanks of Volcán Barú in western Panama. At this elevation the temperature falls sharply once the sun goes down, often by ten degrees or more between afternoon and dawn. That daily range is called the diurnal swing, and it is the single most important thing about the location.

A coffee plant is a metabolic system. Warmth drives it, cold slows it. On a hot lowland farm the cherry ripens quickly and continuously. On a cold mountainside it effectively pauses overnight and restarts at dawn, so the same amount of ripening is spread across a substantially longer season.

Cloud cover does the same thing from the other direction. Boquete gets persistent cloud drifting in off the Caribbean slope, which shades the plants through the hottest part of the afternoon and further slows the process.

2. Slow ripening builds density

A cherry that takes longer to ripen accumulates more sugars and other soluble compounds, and the seed inside it develops a harder, tighter cell structure. The practical result is a physically denser bean.

Density is the first thing a green coffee buyer measures, and it is not a marketing number. It is the physical record of a slow season. You cannot process your way to it, you cannot roast your way to it, and no amount of careful drying will put it into a bean that grew fast and warm.

Alongside density, two other figures decide whether a lot is stable enough to ship and store.

Moisture content
10 to 12 percent

The industry-standard window for green coffee. Below it the bean is brittle and fades quickly. Above it, mould and rapid staling become real risks in transit.

Water activity
Around 0.55 aw

Measures how much of that moisture is chemically available rather than simply present. It predicts shelf stability far better than moisture percentage alone.

Density
Measured per lot

Reported in grams per litre on the lot's own analysis. Higher is generally better at a given screen size, and high-grown Panamanian lots sit near the top of the range.

Beans are separated by size so they roast evenly. A mixed-size batch guarantees that some beans are underdone while others are scorched.

3. Density is what survives a light roast

This is the link most people miss, and it is the one that justifies the price.

The floral and citrus compounds Geisha is famous for are volatile aromatics. They exist in the green bean and they are driven off by heat. Roast dark enough and they are simply gone, replaced by the compounds that develop late in the roast, which taste of roast rather than of origin. A dark-roasted Geisha is an expensive way to buy the flavour of caramelisation.

So the coffee has to be roasted light. But a light roast is unforgiving. A bean that is not dense enough comes out of a light roast tasting thin, grassy and sour, because there was not enough material in it to develop properly in the short time available.

Density buys you the margin. It is what lets a roaster stop early enough to keep the jasmine and the bergamot, without the cup collapsing into sourness.

You cannot process your way to density. Either the mountain gave it to you or it did not.

4. How a coffee is actually scored

Specialty coffee is scored using a cupping protocol maintained by the Specialty Coffee Association. It is a formal procedure, not a tasting note written by a marketing department.

A sample is roasted to a standard profile, ground to a standard size, and steeped in water at a standard temperature and ratio. Several trained cuppers assess the same bowls independently, break the crust at a fixed time, and score a defined set of attributes. The scores are averaged.

The scale runs to 100 points. Eighty is the line at which a coffee is classified as specialty at all. Anything above ninety is genuinely uncommon, and the Geisha lots that made this variety famous sit in that territory.

Specialty grade permits no primary defects in a 350 g sample. One sour or mouldy bean is enough to taint an entire brew.

What processing does, chemically

The same trees, picked the same week, take two different roads once the cherry comes off the branch. This is the only real difference between our two coffees.

Washed. The skin and the sticky mucilage layer are removed before the bean is dried, so the seed dries essentially clean. Very little fermentation-derived flavour makes it into the bean, which means what you taste is the coffee itself, with nothing layered on top. Transparent, high clarity, tea-like. This is the version that shows the farm most honestly, and it is where we would tell you to start.

Natural. The whole cherry is dried intact, fruit and all, over a much longer period. Sugars and organic acids in the fruit interact with the seed throughout, producing heavier body and pronounced berry and stone-fruit character. It is also the riskier process. Dry it badly and you get vinegar and mould rather than fruit, which is why competent natural processing commands a premium.

Neither is better. They are different readings of the same coffee, which is exactly why the tasting flight exists.

Why freshness has a shape

Roasting produces carbon dioxide inside the bean, which then escapes slowly over the following days. This is called degassing, and it is why our bags carry a one-way valve. The valve lets that gas out without letting oxygen in.

Immediately after roasting there is so much gas coming out of the grounds that it physically disrupts brewing. The bed bubbles, water channels around it, and extraction is uneven. This is why coffee is not at its best on day one.

The window opens around five days after roast and stays open for roughly six weeks. After that, oxidation has taken enough of the aromatics that you are drinking a duller version of the same coffee. It is not spoiled and it will not harm you. It is simply no longer worth what you paid.
